Ugh Soup

I don't usually cook on Tuesdays. Nathan works late, so it's just the kids and me. We tend to kind of skip dinner, or just eat a pb & brown sugar sandwich, or mac & cheese . . . stuff that we don't mind, but that just wouldn't quite satisfy Nathan.

Well, today I decided to cook. Even though it's Tuesday. Even though I was busy all day and didn't really have time to plan anything. Even though Micah is at a friend's house, so I really don't have many mouths to feed. Still, it's been sort of cloudy and a bit cool, so I was craving soup.

One of my favorite soups is Vegetable Soup. I love chopping up all the vegies that I have in my fridge and garden, and making a rich, wholesome soup. YUM! I started with a nice chicken broth, seasoned with salt, pepper, basil & rosemary. I added carrots, onion, potato, fresh green beans from the garden (so far, so good).

Hmmm . . . what else can I toss in?? Ah-hah! Cabbage! I love cabbage. Chop. Chop. Chop. Into the pot.

OK, mistake #1 - it was purple cabbage. Instantly, my soup turned a funky Dr. Suess-looking violet.

It didn't look horrible, just kind of bright. But still definitely edible.

But then, mistake #2. It just didn't look like it was quite enough to feed us, so I decided to add a can of corn. Corn goes with everything, right?

Well, maybe. But not creamed corn. I didn't realize my mistake until I'd opened up the can. But you know the saying: Waste not, want not. So in went the creamed corn.

The problem with creamed corn is that it is full of corn starch. Corn starch (here's your science lesson for the day) gets really thick and gooey when it heats up.

So now I have a pot of goopy, grayish-lavendar glop. I'm calling it Ugh Soup, 'cuz that's what I think everytime I look at it.

I think I'll make us some pb & brown sugar sandwiches and save the soup for Nathan when he gets home. Maybe I'll tell him that all of our light bulbs are burned out and serve it to him in the dark. :-)



**UPDATE** In a surprising turn of events, Ugh Soup ended up being pretty darn tasty. Adana even asked for seconds!

Must be going around cuz I had my own not-quite-right meal involving peanut sauce that was more like glue. Ugh noodles.

Yeah, that looks gross! I think my girls would like it just'cuz of the color! And, hey...what's with the PB and brown sugar sandwiches? I've NEVER heard of that one and I'm a huge PB fan! Tell us more!

I won't even tell you what the shot of your Ugh Soup reminded me of. I'm glad it tastes good, though. Maybe eat it with your eyes closed! I've never heard of PB and BS sandwiches either. I'll have to give it a try. Kind of like PB and honey, maybe?

That looks so horrible it almost looks tasty! At least you could wash it down with Moras

That is classic...it reminds of the blueish soup from "Bridget Jone's Diary." Sometimes, some of the grossest looking stuff is the tastiest!

My alltime favorite go to soup is taco soup! It is way easy everything from a can or packet, and add 1 pound hamburger or ground turkey! If you want the recipe I'll send it over to your inbox!

I can't get past "creamed corn." They still sell that stuff?? ::shudder:: I have nightmares about creamed corn.
